
Stir-frys have been a staple in our house for many years, so I was thrilled when zoodles gained fame… out with the old and in with the new! This recipe comes together in under 30 minutes from the moment you enter the kitchen, it’s bursting with flavour and definitely hits the spot!

Zingy Prawn Zoodle Stir Fry
Ingredients
- 2 tbsp refined coconut oil
- 2 clove garlic chopped
- 3 scallions / spring onion chopped
- 1 medium fresh red chilli chopped
- 1 inch fresh root ginger minced
- 2 tsp dried basil or thai basil
- 165 g (5½ oz) broccoli cut into small florets
- 4 mushrooms chopped
- 600 g (21 oz) shrimp (prawns)
For The Zoodles:
- 2 tbsp grassfed butter
- 2 medium zucchini spiralized
- ½ tsp pink himalayan salt
- ½ tsp fresh ground pepper
To Serve:
- 2 tbsp fresh coriander leaves chopped
- 2 tbsp fresh lime juice
- 4 tbsp olive oil cold-pressed, extra-virgin
Instructions

Melt the coconut oil in a wok or medium sized frying pan

Sauté the garlic, scallions, chilli, ginger, basil, broccoli and mushrooms for 6-8 minutes

Add the shrimp and cook for a further 3-4 minutes until cooked through

In a separate pan sauté the zoodles in the butter with salt and pepper for 3-4 minutes

Add the zoodles to the wok and stir altogether

Serve immediately sprinkled with the coriander, fresh lime juice and a tbsp of olive oil per dish
