Sophie Laura's Bacon & Broccoli Soup

  • 2 tbsp ghee or coconut oil
  • 2 oz(60 g) yellow onion chopped
  • 2 oz (60 g) celery, chopped
  • 2 cloves garlic minced
  • 16 oz (450 g) broccoli florets chopped
  • 2 cups bone broth grass-fed (or water)
  • 1.5 cups full-fat coconut milk
  • 8 medium slices of bacon cooked crispy & diced
  • 1 tsp salt and pepper season to taste


  • 1 tbsp collagen protein per serving will provide an extra 10g of protein per serving
  • 1/2 tbsp sour cream per serving not included in recipe's macros


  1. Cook the bacon either under the grill or fry in a skillet

  2. Melt the ghee or coconut oil in a large saucepan over medium heat

  3. Add the chopped onion, celery and garlic and sauteĢ for 5 minutes

  4. Add the chopped broccoli, bone broth and coconut milk to the saucepan and bring to the boil

  5. Lower the heat and simmer for 10 minutes until the broccoli is tender
  6. Using a hand blender, blitz the soup until smooth
  7. Season with salt and pepper, to taste & serve topped with the bacon
  8. Optional: If using, stir in the collagen protein before topping with bacon, mix to combine fully
