Cut the chicken thighs into strips and place in the bottom of a suitably sized baking dish
Mix together the melted ghee and fajita seasoning then drizzle half of it over the chicken, rubbing together to cover entirely
Cover the chicken with a layer of onions and peppers and drizzle over the rest of the ghee and fajita seasoning
Top with the shredded cheese
Bake for 30 minutes or until the chicken is fully cooked through
