Pour ¼ cup coconut cream into a small bowl and sprinkle the gelatin powder evenly over the top on top. Whisk together immediately, then set aside.
The mixture should be bubbling at the edges.
Remove from heat and stir in the orange extract and vanilla extract.
Add the gelatin and coconut cream mixture, this should now be thick. Whisk it into the mixture until the pudding is smooth and combined.
Let the pudding cool in the pan for 10 minutes... Then divide the pudding between 4 jars, I like to use glass jars or ramekins.
Cover each pudding with plastic wrap, but push the wrap against the top of the pudding to prevent a film forming. Refrigerate for 2-3 hours so they set nicely.
Serve with some cacao nibs and orange shavings sprinkled over the top - delicious!
