Place a medium saucepan over medium heat. Combine and warm together the coconut milk and beaten egg yolk.
Once warmed add the cocoa powder, erythritol, coconut oil, orange extract and vanilla extract. Continuously whisk together vigorously while heating in order to smooth out the mixture, we want it to be lump free.
Whilst the pudding is heating and combining. Add the freshly boiled water from the kettle into a bowl and sprinkle the gelatin on top, allowing it to dissolve on the surface and then whisk together to combine with the water.
Remove the pudding from the heat and add the gelatin to the pudding whilst whisking vigorously to combine.
Pour the pudding into 4 glass jars and leave on the side to cool down. Once cooled pop them into the fridge for 3 hours or until they've set. Enjoy!
