Cauliflower Mushroom Rice

  1. Grate the cauliflower in a food processor
  2. Melt the butter (and coconut oil, if using) in a medium pan, add the mushrooms and spring onions sauté for 2 mins

  3. Add the grated cauliflower, salt and pepper and give it a good stir
  4. Cover the pan then turn the heat down low and slowly cook for 5-7 mins

  5. That's it guys!!
