
Spicy Sausage Soup & Parmesan Chips

Ingredients
- 400 g (14 oz) pork sausage
- 2 tbsp refined coconut oil or avocado oil
- 50 g (1.5 oz) onion chopped
- 1 cloves garlic minced
- 1 tsp chilli flakes
- 1 tsp ground cumin
- 3/4 tsp white pepper
- 200 g (7 oz) crushed tomatoes
- 1 tbsp tomato paste
- 1/2 tsp pink himalayan salt
- 1 tbsp MCT oil
- 900 ml (3.5 cups) beef stock or bone broth

Instructions

In a large pan sauté the onion and garlic in the oil until softened

Add chilli flakes, cumin, white pepper, crushed tomatoes, tomato paste and salt

Mix the beef stock into the pan with the MCT oil and bring to the boil

Meanwhile grill or pan fry the sausages and cut into 1/4" pieces and add to the soup

Simmer the soup for another 10 minutes
