Asian Beef Stir Fry Zoodles
Ingredients
Asian Beef
- 450 g (1 lb) ground beef
- 2 tbsp coconut oil flavourless
- 1 tbsp onion diced
- 3 mushrooms sliced
- 2 tsp garam masala or curry powder
- 2 tsp chilli powder (optional)
- 2 tsp ground cumin
- 1 tsp red chilli flakes
- 1 tsp ground fenugreek
- 1 cup bone broth or water
Stir Fry Zoodles
- 3 tbsp grassfed butter
- 70 g (2½ oz) cabbage chopped
- 150 g (6 oz) zucchini noodles
- 1 fresh red chilli sliced (optional)
- 2 tbsp fresh lime juice
- 1 tbsp fresh coriander leaves chopped
- salt & pepper to taste
Instructions
Asian Beef

Over a moderate heat in a medium saucepan sauté the onion and mushroom in the coconut oil for a few minutes

Stir in the ground beef and cook until the meat is no longer pink

Add all of the spices to the pan, combine well

Pour in the bone broth or water and continue cooking for 15 minutes until the stock is reduced down to a good consistency
Stir Fry Zoodles

Whilst the beef cooks, use a separate pan to sauté the sliced cabbage in with 2 tbsp of the butter with salt and pepper for 5 mins

Add the chopped fresh chilli to the cabbage for spice (optional)

Finally, add the zucchini noodles into the pan to stir fry with the final tablespoon of butter. Add seasoning as required and cook through for 8-10 mins, whilst still stirring

Plate up the Stiry Fry Zoodles and spoon over the Spicy Asian Beef. Serve with freshly squeezed lime and coriander sprinkled all over. Enjoy!
