Rendang Beef with Cauliflower Rice

Ingredients
- 500 g (1 lb) ground beef
- 2 tbsp refined coconut oil
- 1 tbsp Easy Keto Rendang Dry Spice
- 200 ml (1 cup) full-fat coconut milk
- salt and pepper to season
- 600 g (20 oz) cauliflower
- 1 tbsp mint leaves chopped
Instructions

Over a moderate heat in a large shallow pan melt 1 tbsp of the coconut oil, add the ground beef and cook until it’s no longer pink

Stir in our Rendang Dry Spice blend

With half of the cauliflower, cut into little bite-sized florets and add to the ground beef. Cook for 10-15 minutes stirring frequently.

Shred the remainder of the cauliflower in a food processor

Melt the remaining coconut oil in a medium saucepan and add the shredded cauliflower together with the chopped mint leaves. Season with salt and pepper

Stir well and sauté for 5-8 minutes on a moderate heat making sure the ‘rice’ doesn’t stick to the bottom and burn

When the ground beef is cooked through add the coconut milk and a tablespoon of chopped mint leaves. Bring to the boil and cook for a further 3-5 minutes

Serve the curry on a bed of minted cauliflower rice and sprinkle any remaining mint leaves over the top
