Sophie Laura’s Rendang Beef with Minted Cauli Rice

Our little twist on the original Rendang Beef stew, speeding things a long using ground beef with our own special blend of Rendang Dry Spice adding a real punch of flavour!

Rendang Beef with Cauliflower Rice

Cook Time 45 minutes
Total Time 1 hour
Servings 4 servings



  1. Over a moderate heat in a large shallow pan melt 1 tbsp of the coconut oil, add the ground beef and cook until it’s no longer pink
  2. Stir in our Rendang Dry Spice blend
  3. With half of the cauliflower, cut into little bite-sized florets and add to the ground beef. Cook for 10-15 minutes stirring frequently.

  4. Shred the remainder of the cauliflower in a food processor
  5. Melt the remaining coconut oil in a medium saucepan and add the shredded cauliflower together with the chopped mint leaves. Season with salt and pepper
  6. Stir well and sauté for 5-8 minutes on a moderate heat making sure the ‘rice’ doesn’t stick to the bottom and burn
  7. When the ground beef is cooked through add the coconut milk and a tablespoon of chopped mint leaves. Bring to the boil and cook for a further 3-5 minutes
  8. Serve the curry on a bed of minted cauliflower rice and sprinkle any remaining mint leaves over the top
