Tastes just like the real deal and how awesome is it to lose weight WHILST eating pizza!! Woo! A super quick and easy dinner for all the family. This recipe makes 2 pizzas, so 12 slices altogether – each slice is 3g carbs, however, because of all the fat it’s SUPER filling so you might only manage 3 or 4 slices. Bonus, save the other 2 slices for your lunch the following day!

Pepperoni Pizza with Fathead Crust
- 170 g (5½ oz) mozzarella cheese grated
- 60 g (2½ oz) full fat cream cheese cut into chunks
- 1 large egg
- 170 g (5½ oz) almond flour
- ½ tbsp psyllium husk powder
- 64 g (2¼ oz) cheddar cheese grated
- 113 g (3½ oz) marinara sauce
- 18 pepperoni slices
Preheat oven to 180°C (350°F)
Low Carb Pizza Crust:
Place the mozzarella and cream cheese into a microwavable bowl and microwave for 2 minutes until the cheese it melted entirely.
Lightly beat the egg and add to the melted cheese to combine
Add the dry ingredients and combine to create a sticky dough, allow to cool for a few minutes.
Place half of the mixture onto a piece of baking paper, place another piece of baking paper on top of it. Use a rolling pin, alternately roll the dough out between the two baking paper sheets until a thin(ish) crust is created. Repeat with the other half of the mixture.
Remove the top pieces of baking paper and place each dough with the bottom sheet of baking paper onto a sheet pan and poke holes all over the dough with a fork.
Bake in the oven for 8 minutes until golden brown, flip the pizza base and bake for another 8 minutes on the other side.
Remove from the oven and spread the tomato sauce onto the pizza, top evenly with the grated cheddar cheese and add the pepperoni slices.
Bake until the cheese has melted (about 3-5 mins). Cut into 6 slices, serve & enjoy!
