Oven Roasted Lamb with Vegetables

Servings 4 people
Ingredients
- 500 g (17 oz) lamb steaks/chops
- 1 fennel bulb
- 300 g (10 oz) cauliflower florets
- 200 g (7 oz) brussels sprouts
- 1 tbsp rosemary
- 1 tbsp sage
- 1 tbsp oregano
- 1 fresh red chilli chopped
- 1/2 tsp pink himalayan salt
- 1 tbsp avocado oil
- 40 g (1.5 oz) grass fed butter
Instructions

Place all vegetables in the bottom of a roasting tray and drizzle with avocado oil

Place lamb on top

Mix herbs and chilli and sprinkle over the lamb and vegetables

Spread the top of the lamb with some grass fed butter as desired

Bake at 350°F (180°C) in the oven for 30 mins until lamb is cooked to your liking
