Sophie Laura’s New York Baked Cheesecake


New York Baked Cheesecake

Cook Time 50 minutes
Total Time 1 hour 10 minutes
Servings 10 pieces


For the base

For the filling

  • 1 cup sour cream
  • 2 cups cream cheese
  • 1 tsp vanilla extract sugar-free
  • 1/4 cup erythritol
  • 1 tsp lemon zest
  • 1 tbsp lemon juice fresh
  • 3 whole large eggs


  1. Add all the base ingredients into a bowl and mix together until crumbly.
  2. Line bottom of a cake tin with baking paper and press the base mixture into the bottom of tin.
  3. Place tin in freezer to chill. Pre-heat oven to 160°C or 320°F.

  4. In a mixing bowl, (apart from the eggs) add the filling ingredients and mix together using an electric beater. Then add 1 egg to the bowl at a time, slowly mixing the filling into a creamy consistency.

  5. Take base out of the freezer and fill the tin with the cheese mixture. Wrap base of tin in aluminium foil then place on an oven tray with shallow water. Bake in the oven for 50 minutes.

  6. When finished, open the oven door slightly and place folded towel to keep the door ajar allowing the cake to cool down slowly for 30 mins. Then place into the fridge to chill for 30 mins.

  7. Enjoy!
