This delicious combo will soon make you forget you’re not actually eating rice – the mushroom adds an earthy flavour to the cauliflower whilst it soaks up the butter making it soft and creamy. Cauliflower Mushroom Rice
Grate the cauliflower in a food processor
Melt the butter (and coconut oil, if using) in a medium pan, add the mushrooms and spring onions sauté for 2 mins
Add the grated cauliflower, salt and pepper and give it a good stir
Cover the pan then turn the heat down low and slowly cook for 5-7 mins
