Sophie Laura’s Cauliflower Mushroom Rice

This delicious combo will soon make you forget you’re not actually eating rice – the mushroom adds an earthy flavour to the cauliflower whilst it soaks up the butter making it soft and creamy. This can seriously be added as a veggie side dish to accompany any meal but we think it’s extra tasty with our Chilli Con Carne, Easy Keto Red Thai Curry, Harissa Chicken Traybake, Kickin’ Butter Chicken Curry, Chicken Cacciatore recipes.

Cauliflower Mushroom Rice
Ingredients
- 1 medium cauliflower
- 3 tbsps grassfed butter
- 1 tbsp refined coconut oil optional
- 2 mushrooms diced
- 1 spring onion / scallion chopped
- 1 tsp pink himalayan salt
- 1/2 tsp black pepper
Instructions

Grate the cauliflower in a food processor

Melt the butter (and coconut oil, if using) in a medium pan, add the mushrooms and spring onions sauté for 2 mins

Add the grated cauliflower, salt and pepper and give it a good stir

Cover the pan then turn the heat down low and slowly cook for 5-7 mins
