Macadamia Nut Bread

Ingredients
- 150 g (5 oz) macadamia nuts
- 220 g (7 oz) coconut butter
- 5 eggs
- 60 ml (1/4 cup) lemon juice
- 1/2 tsp pink himalayan salt
- 1 tsp baking soda
Instructions

Pre-heat the oven to 350°F (180°C). A food processor is the best and easiest way to make this bread

Put the macadamia nuts into the food processor to make macadamia butter

To do this you need to blitz on high for a minute or two to get a consistency of a part chunky nutty buttery blend

Once this has been achieved, still running the processor on high, drop one egg down the chute and process for around 30 seconds

When you feel that the butter is becoming more smooth add the second egg and process until its running smooth again

You can add the remaining 3 eggs and blitz until it looks like a smooth sauce

Add the coconut butter and salt to the processor and this time run on low for 15-20 seconds until it's all feeling smooth again

Finally add the lemon juice and baking soda and run for a few more seconds

Grease an 8.5 inch loaf tin with butter and pour in the mixture

Bake for 35 minutes, check with a skewer to ensure it's cooked through

Once you've turned the loaf out onto a wire rack and given it at least a few minutes to cool, patience, patience...

Relax and enjoy a slice smothered with grassfed butter, perfect mmmmm
