Easy Keto Slaw
Prep Time 10 minutes
Servings 8 servings
Ingredients
- 450 g (1 lb) purple cabbage shredded
- 200 g (7 oz) zucchini shredded
- 1/2 large red onion shredded
- 2 cloves garlic minced
- 1/2 cup fresh cilantro chopped
- 1/2 tsp pink himalayan salt
- 2 tbsp apple cider vinegar
- 1 tbsp dijon mustard
- 3 tbsp olive oil for serving only
- 1-2 tsp spices of choice.. I like cumin & smoked paprika
Instructions

Shred cabbage all the veg & garlic into a large bowl.

Add the remaining ingredients and work them in with your hands.

Allow to sit for at least 15 minutes before serving to allow the cabbage to get mildly limp.
