Sophie Laura’s Easy Keto Mayonnaise
Servings 10 servings
- 1 large egg
- 2 large egg yolks
- 1 tsp dijon mustard
- 1 tbsp apple cider vinegar
- 1 whole lemon juice
- 1/4 tsp pink himalayan salt
- 1 cup (200 ml) macadamia oil or refined avocado oil or refined olive oil needs to be light-tasting as not to overpower the flavour
- pinch of black ground pepper
Using a countertop blender, add all of the ingredients apart from the oil and mix just enough to combine.
Have the blender running on a medium speed and very slowly pour in the oil, taking at least 2 minutes to add all of the oil into the blender - this is really important for it to thicken properly.
After all of the oil has been added, continue to blend until the mixture reaches a consistency of mayonnaise
