Easy Keto Chipotle Chicken Soup

  • 500 g (1 lb 2 oz) chicken thigh fillets
  • 225 g (8 oz) vine ripened tomatoes chopped
  • 150 g (5 oz) yellow onion chopped
  • 3 tbsp sauce from chipotle peppers in adobo sauce
  • 2 tbsp ground cumin
  • 1 tsp smoked paprika
  • 2 tsp pink himalayan salt
  • 1 tsp ground black pepper
  • 900 ml (4 cups) bone broth
  • 400 ml (2 cups) full-fat coconut milk
  • 1 avocado cubed
  • 6 lime wedges
  • 2 tbsp fresh cilantro chopped (optional)


  1. Preheat the oven to 150°C (300°F)
  2. In a large ovenproof casserole dish place the chicken thigh fillets, tomatoes, onion, chipotle sauce, cumin, paprika, salt, pepper and bone broth and stir

  3. Cover the casserole and place in the centre of the oven for 2 hours

  4. Remove the casserole from the oven and pick out the thigh fillets onto a chopping board

  5. Chop the chicken into chunks and replace in the casserole

  6. Stir in the coconut milk and return to the oven uncovered for 15-20 minutes

  7. Serve up 2 portions of the soup with chopped avocado and cilantro on top, and freshly squeezed lime juice and a little lime zest, yum!
