A simple combination of ingredients that put in all the teamwork and come out packing a punch of flavour! Chicken Cacciatore bubbles away in the oven and pretty much looks after itself making it a great dish for gatherings.

Easy Keto Chicken Cacciatore
Ingredients
- 500 g (16oz) chicken thigh fillets
- 84 g (3oz) ghee or grassfed butter
- 2 tsp smoked paprika
- 1 tsp basil
- 1 tsp oregano
- 1 tsp chilli powder
- 1 tsp chilli flakes optional
- 200 g (7oz) crushed tomatoes
- 1/4 tsp pink himalayan salt
- 1/2 tsp black pepper
Instructions

Cut the chicken thighs into smaller pieces and sauté in the ghee until cooked on all sides

Stir in the rest of the ingredients

Pour into an ovenproof casserole dish and bake in the oven for 20-25 minutes at 350°F (180°C) until the chicken is cooked through

Add red bell pepper, mushrooms, olives for variety but remember to keep in mind the carb count
