
Chinese Chicken Fried "Rice"
Ingredients
- 100 g (3½ oz) cooked chicken
- 300 g (11 oz) cauliflower rice
- 1 tsp chinese five spice (optional)
- 2 scallions trimmed & diced
- 1/4 cup red bell pepper diced
- 2 tbsp ghee
- 2 tbsp gluten-free tamari sauce
- 2 large eggs whisked together
- 1 tsp fresh garlic minced
- 1 tbsp sesame oil
- pink himalayan salt & pepper season to taste
Instructions

Using a food processor, pulse the cauliflower into a "rice" consistency

Heat a skillet over medium-high heat and add the ghee, cauliflower rice, red pepper scallion and chinese five spice covering the surface of the pan

Allow to cook through for 5 minutes, browning the cauliflower slightly (be careful not to burn)

Stir in the cooked chicken, garlic, season with salt and pepper and allow to cook for a further 5 minutes, keep stirring as not to burn rice

Push the rice to one side of pan and add the whisked eggs into the other side of the pan allowing to cook slightly

Combine eggs and rice until eggs are cooked through, add the soy sauce and sesame oil and combine well
