
I decided to give the classic sloppy joe a delightfully interesting twist with beautiful flavours coming from the cumin, garam masala, fenugreek, ginger and paprika. This dish will tantalise those taste buds so much you won’t even be thinking about the missing buns!

Bengal Sloppy Joe Lettuce Wraps

Cook Time 25 minutes
Total Time 40 minutes
Servings 4 people
Ingredients
- 1 tbsp avocado oil or refined coconut oil
- 75 g (2.5 oz) onion chopped
- 1 stick celery chopped
- 2 cloves garlic minced
- 1 fresh red chilli chopped
- 1 inch fresh root ginger minced
- 500 g (17 oz) ground beef
- 2 tsp chilli powder
- 2 tsp paprika
- 2 tsp ground cumin
- 2 tsp garam masala / curry powder
- 1 tsp ground fenugreek
- 1 tsp pink himalayan salt
- 1/2 tsp black pepper
- 1 cup (200 ml) bone broth or water
- 1 cup (200 ml) tinned chopped plum tomatoes
- 1/2 cup (75 ml) full-fat coconut milk optional
- 1 tbsp fresh coriander
- 2 baby gem lettuce or your own favourite lettuce
Instructions

Melt the oil in a large pan, add onions, celery, garlic, red chilli, ginger and saute over medium heat for 5 mins

Stir in the minced beef and cook until the meat is no longer pink

Add all of the spices to the pan with the salt and black pepper

Stir in the bone broth and chopped tomatoes, add the coconut milk at this stage if using and bring to the boil

Continue cooking over a medium heat for 15-20 mins stirring occasionally until the mixture reduces and becomes more concentrated

Spoon around 2 tablespoons of the Sloppy Joe mixture into each lettuce leaf

Sprinkle over the freshly chopped coriander and serve...

Grated cheese could also be added if you're eating dairy
