Sophie Laura’s Bacon-Wrapped Meatloaf

This meatloaf recipe is super easy to prep and pop into the oven and the rich, creamy mustard sauce we’ve created to go with it is just the icing on the cake – absolutely delicious! (If we do say so ourselves)

Bacon-Wrapped Meatloaf

Cook Time 50 minutes
Total Time 1 hour
Servings 4 people


  • 100 g (3.5 oz) yellow onion chopped
  • 1 tbsp ghee
  • 500 g (17 oz) ground beef Lamb or Pork
  • 100 g (3.5 oz) cheddar cheese grated
  • 100 ml (1/2 cup) heavy cream
  • 1 egg
  • 1 tbsp basil
  • 1 tsp oregano
  • 1 tsp chilli flakes
  • 1 tsp pink himalayan salt
  • 1/2 tsp black pepper
  • 200 g (7 oz) bacon streaky
  • 200 ml (1 cup) heavy cream for the sauce
  • 1 tsp dijon mustard
  • 1 tbsp chopped chives or parsley
  • 1/4 tsp black pepper


  1. Sauté the onion in the ghee for a few minutes until softened

  2. Mix the ground meat in a large bowl adding the sautéd onions, cream, cheese, egg, chilli, herbs, salt and pepper

  3. Mix well and form into a large loaf size and place on a baking dish
  4. Layer the bacon slices over the loaf and tuck under at the edges
  5. Bake the loaf in the middle of the oven 350°F (180°C) for 40-45 minutes.

  6. Don't let the bacon overcook before the meat is done, lower the heat if this happens
  7. Pour all of the juices that accumulate from the meat loaf into a pan to make the sauce.
  8. Mix the juices, cream and mustard and bring to a boil

  9. Lower the heat and simmer for 8-10 mins
  10. Add salt and pepper as required and the chives or parsley
  11. Leave to cool slightly before cutting
