
Bacon & Broccoli Crack Slaw

Ingredients
- 500 g (1 lb 2 oz) bacon, chopped
- 500 g (1 lb 2 oz) cabbage, coarsely chopped
- 250 g (9 oz) broccoli, coarsley chopped
- 7 tbsp grass-fed butter
- 3 tbsp refined coconut oil
- 2 tsp pink himalayan salt
- 1 tsp ground black pepper
- 1 tsp caraway seeds (optional)
Instructions

Chop the bacon into 1” size pieces and cook in a large saucepan for a few minutes, remove the bacon from the pan and set to one side

Melt the butter and coconut oil in the saucepan, add the broccoli and cook over a medium heat for 5 minutes

Add the cabbage, salt, pepper and caraway seeds (if using) to the broccoli mixing together

Cook for a further 10-15 minutes, the cabbage should be cooked through but still have a little bite to it ‘al dente’

Return the bacon to the pan, add seasoning to taste and and continue cooking for a few more minutes
