Sophie Laura’s 5 Min Easy Keto Guacamole

I was never a big fan of guacamole until I started making it myself, I find the bottled stuff pretty gross, but making my own meant I could play with the consistency. I like my guac chunky and I’ll throw in chopped cherry tomatoes for a little sweetness. This recipe is kept super simple and easy so when you’re scouring the cupboards for a quick snack, guacamole and celery sticks are only 5 minutes away and fill you right up!

5 Min Easy Keto Guacamole
Ingredients
- 2 medium avocado ripe
- 1 spring onion chopped
- 3 tbsp olive oil extra virgin, cold-pressed
- 1 tbsp lime juice fresh
- 2 tbsp coriander chopped, fresh
- 1/2 tsp chilli flakes
- 1/4 tsp pink himalayan salt
- 1/2 tsp black pepper
- 1 garlic clove minced (optional)
Instructions

Ensure the avocado is ripe and squashable before you make this

Squash the avocado in a suitable bowl with a fork

Stir in the rest of the ingredients and add salt and pepper to taste

Voila! How easy was that!

Add fresh chillies or chopped tomatoes for extra taste. Store in an air-tight container for up to 3 days, the citric acid in the lime helps to keep it fresh.
